In the spirit of Valentine's Day, I wanted to share a Quick & Easy dinner recipe with you- so that you spend less time in the kitchen and more time spending time enjoying this dish!. I've included Chocolatey Dessert to set the mood and some Lovely gift ideas that will help you plan a memorable Valentine's Day for you and your loved ones.

Lemony Basil Shrimp Scampi


Tender juicy shrimp and a buttery garlic sauce makes this shrimp scampi the perfect dish to celebrate your Valentine’s Day. Topped with fragrant basil-a known aphrodisiac, sets the stage for a romantic meal.

Yields 4 servings


Ingredients:

8 ounces linguine, cooked al dente

1, 12-ounce package SeaPak Shrimp Scampi

¼ cup dry white wine

¼ teaspoon red pepper flakes, optional

1 tablespoon lemon zest

¼ cup torn fresh basil


Directions:

Cook SeaPak Shrimp Scampi according to package directions.

Add cooked linguine, and wine. Reduce heat to low and simmer for 5 minutes.

Stir in red pepper flakes and lemon zest.

Garnish with fresh basil right before serving.

Enjoy!





Chocolate Pots de Crème


Rich & Creamy cups of pure chocolate bliss.



Yields 8 servings

Recipe by Chef Jennifer Hill Booker


Ingredients: 6 ounces semisweet chocolate chip

6 ounces dark chocolate chips 4 large eggs, at room temperature 2 teaspoons vanilla extract

1 pinch cayenne 1 pinch salt 8 ounces (1 cup) very hot strong coffee or espresso 1 cup heavy cream, cold 2 tablespoons sugar

Directions: Place the chocolate chips, eggs, vanilla, cayenne, and the salt into a blender.

Pulse 5 to 7 times or until the chocolate chips are pulverized. Turn on the blender on low speed and carefully pour the very hot coffee through the top of the blender lid, in a steady stream. The coffee will melt the chocolate turning it into a smooth mixture.

Blend until smooth and creamy. Pour the mixture into small mason jars, wine glasses or demitasse cups and place in the refrigerator for 2 to 3 hours, or until firm. Whip the cream with the sugar together with a wire whip.

Add a spoonful of whipped cream to each pot de crème right before serving.

Garnish with fresh fruit, chocolate sprinkles or wherever your imagination takes you.
